Mid-Week Munchies- Simple Fried Rice

Like most of us toward the middle of the week, Hubby and I were feeling a little lazy about cooking dinner.  We wanted something healthy, we didn't want to spend money on takeout and we didn't want to spend hours in the kitchen.  So, as a solution to this dilemma, Hubby decided to make fried rice with the ingredients we had left over in our pantry and it turned out to be delicious!  




Simple Fried Rice Recipe


-Serves about 4
-Cook time about 1 hour


*Feel free to add or remove whichever vegetables you like, or what you have available!
*This recipe can also be made with white rice
*Gluten free and Dairy free! :)



Ingredients:

  • Two cups cooked brown rice
  • 1 cup frozen peas
  • 1/2 cup frozen green beans
  • Two carrots or 1/2 cup frozen carrots
  • 1 clove of garlic, minced
  • 1/4 cup peanut oil
  • 1/4 cup soy sauce
  • 4 eggs
Directions:

  • Cook brown rice according to the directions on the package (about 45-50 minutes)
  • Cook vegetables in the oil, soy sauce, and garlic until vegetables are soft, be careful not to burn garlic
  • Add eggs and blend together with the vegetables until eggs are cooked
  • Drain the cooked rice and stir in with the vegetables and eggs
  • Mix all ingredients and add more oil and or soy sauce to taste
  • Enjoy!
